How to store truffles Chocolate is very sensitive to sudden changes in temperature. Kakayo truffles should be stored in a cool, dry place at 15.5°C/60°F. If the chocolate becomes too warm, the cocoa butter rises to the surface and forms a dusty gray film known as "bloom." This "bloom" is not harmful, however esthetically unpleasant. We do not recommend storing chocolates in the refrigerator. However, if you decide to choose this method for storage; take the truffles out an hour before serving. This way the cocoa liqueur and cocoa butter can stabilize at this new temperature. Chocolate is very porous and can absorb odours from the refrigerator
Best Before We do not use any preservatives in our truffles and they should be eaten within 10 days of purchase.
